I don’t know about you, but spring is my absolute favorite time of year. The skies are bright, the temperatures are just right (before summer decides to melt us all), and flowers are showing off their beautiful blooms. Plus, let’s not forget one of the best parts—yummy springtime recipes!

Spring is that magical season when we swap out heavy winter comfort food for fresh, vibrant dishes that make us feel like we’ve got our lives together. (Even if we’re still wearing fuzzy socks with flip-flops because the weather can’t make up its mind.)

One of my go-to springtime recipes is Strawberry Spinach Salad with Poppyseed Dressing—because nothing says “spring” like sweet strawberries and fresh greens. It’s quick, easy, and packed with flavor!

Strawberry Spinach Salad with Poppyseed Dressing

Ingredients:

  • 6 cups fresh baby spinach
  • 1 ½ cups sliced strawberries
  • ½ cup crumbled feta cheese
  • ¼ cup sliced almonds (toasted for extra yum!)
  • ¼ red onion, thinly sliced
  • ½ cup poppyseed dressing

Directions:

  1. Toss everything in a big bowl.
  2. Drizzle with dressing.
  3. Try not to eat the whole thing before serving.

This salad is perfect for a light lunch, a side dish for your Easter brunch, or just an excuse to eat strawberries by the handful.
