🛒 Ingredients:

Barbecue Chicken

  • 2 tbsp olive oil
  • 2 medium onions
  • ¼ tsp salt
  • 1 cup ketchup
  • ½ cup water
  • 1 tbsp Smoky Barbecue Rub
  • 2 tsp apple cider vinegar
  • 1½–2 lbs boneless skinless chicken thighs
  • 1½ cans black beans (rinsed and drained)
  • Juice of 1 lime

Dressing for Coleslaw

  • ¾ cup Greek yogurt
  • ¾ cup low-fat buttermilk
  • 1 tbsp apple cider vinegar
  • 2 tsp sugar
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ¼ tsp black pepper

Coleslaw & Toppings

  • 1 bag coleslaw mix
  • 1 can pineapple tidbits, drained
  • 1 cup fresh cilantro leaves, plus extra for garnish
  • Optional: Fresh avocado slices

👩‍🍳 Directions:

  1. Set your Multi Cooker to SEAR on LOW for 10 minutes. Add oil and heat for 3 minutes.
  2. Slice onions using the Simple Slicer, then halve them. Add to pot with salt and sauté 3–5 minutes. Press CANCEL.
  3. Stir in ketchup, water, rub, and vinegar. Add chicken.
  4. Place the wire rack inside. In the Ceramic Pot, combine black beans and lime juice. Cover and place into the rack.
  5. Lock the lid. Select POULTRY, set to 7 minutes, and press START.
  6. While that magic happens, shake together the dressing in the Measure, Mix & Pour®. Toss with coleslaw mix, pineapple, and grated cilantro using the Herb Mill.
  7. When time’s up, manually release pressure and remove the ceramic pot. Chop chicken with the Salad Chopper.
  8. Set Multi Cooker to SEAR on HIGH for 5 minutes to reduce the sauce. Add chicken back in and stir.
  9. Build your bowls: coleslaw, BBQ chicken, beans, and all your fave toppings. (Avocado lovers, this is your time.)
